Happy Friday!! 🍟 I’ve been eating such yummy food this week for my birthday that I forgot to post my breakfast from Monday! When I was grocery shopping last Sunday I saw a silicone circle that you can put in a pan to make perfect sunny side up eggs, so naturally I bought it 😂😂 I tried it for the first time earlier this week and it worked amazing! That fruit I could eat it all day long and never be bored am I alone? 😂 more new recipes are coming ur way pretty soon I’m just havin a week of getting things sorted (plus it’s hot so I don’t feel like spending tons of hours cookin😅 or else I’m the one that’s gonna get cooked 🥵) RECIPE – added sugar free & gluten free ❂ Ingredients APRICOT COMPOTE: Around 8-9 medium apricots Half lemon juice 1 tbsp chia seeds BASE: 2 cups oats* 2/3 cup desiccated coconut 0,5 cup sunflower seeds 1/2 cup chopped dates 1/2 cup chopped dried apricots 1/2 cup peanut butter or tahini ❂ Method Compote: cut the fruits in 4 and add to a pan on medium heat with other ingredients. Add drop water when burning. Cook for about 6 minutes. Then drain the juice away from the fruits like shown. Keep both Base: Mix all the dried ingredients first. Then add peanut butter and lastly the apricot juice. Combine. Line an oven safe dish, add half of the oat mix. Press well (with clean hands it’s easy) Add compote fruits on top (not at the edge). Add second half of the mix and press again. Oven at 180C for 37minutes. Cauliflower Alfredo on this perfect summer night 🙌 I was craving pasta and this came to mind 😋. Honestly the sauce by itself was a little bland but everything on top made it perfect! I’ll post the recipe so you guys can tweak it if you want. SAUCE 1 head cauliflower 1.5 Tbsp @fourthandheart garlic ghee 1 cup almond milk 1 tsp garlic powder 1 tsp onion powder 2 tbsp nutritional yeast (or parmesan) S + P OPTIONAL 1 box @eatbanza Penne pasta (or any pasta) 1/4 cup chopped parsley 1/4 cup chopped basil Shredded chicken 1 cup frozen peas Steamed broccoli Bacon crumbles Steam cauliflower then drain. Add cauliflower and rest of sauce ingredients to blender. Pour sauce, chopped herbs, broccoli, chicken, and peas with pasta. Mix well then top with bacon crumbles.
